Apple Pecan Chickpea Salad Sandwich
This simple mashed Apple Pecan Chickpea Salad Sandwich is a healthy lunch. No mayo here! Tahini is used alternatively.
Chickpea salad sandwiches are one of these food that I simply can’t get sufficient of. They may be an clean cross-to whilst you want a brief meal.

For this Apple Pecan Chickpea Salad Sandwich I made a tahini dressing. The savory flavors of the tahini pair nicely with the candy flavors of the apple.
To feature even more sweetness, I brought dried cranberries. I used pecans for a few crunch, however you can use walnuts or roasted cashews in case you need.

INGREDIENTS :
Tahini Dressing:
- 1 clove garlic minced
- 1/4 cup tahini
- 1/4 cup lemon juice
- Salt
Chickpea Salad Sandwich:
- 1 apple chopped - I used Gala
- 3/4 cup chopped pecans
- 15 ounces garbanzo beans (chickpeas)
- 1/2 cup dried cranberries
- Salt
- 16 slices gluten free bread - I used millet chia bread
- Roasted Garlic Hummus optional
INSTRUCTIONS :
- Tahini Dressing: Mix all ingredients.
- Chickpea Salad Sandwich: Add garbanzo beans. Mash with a fork, of if you have one, a pastry blender. Mash at least half the garbanzo beans.
- Add the chopped pecans and dried cranberries. Mix well. Add salt to taste.
- Toast bread. Spread Roasted Garlic Hummus on one slice, if desired. Pile on the chickpea salad and top with other piece of toast.
